A passionate self-taught chef, Gary honed his skills in a number of Michelin-starred establishments alongside the Meilleurs Ouvriers de France.
His culinary journey also took him to Thailand, to Bangkok and Koh Samui, where he explored new flavours and techniques.
Faithful to raw produce and an authentic approach, his menu blends French tradition with Asian influences, offering a daring reinterpretation of the classics.
